Picnic on the Green was founded in May, 2017 by Carrie Roper. Carrie spent the first 20 years of her career as a Human Resources Professional, including founding Pathfinder HR Solutions & Pathfinder Staffing Solutions (www.pathfinder-hr.com) in 2010.  Her love of cooking, apprenticeships with CIA chefs, periodic catering requests, and encouragement from friends and family members led to an opportunity to live-out one of her true passions – serving others through food. Picnic on the Green has become a fun new venture known for fresh, innovative, and delicious dishes. Carrie is a proud new member of the Houston Culinary Guild.

Slow & steady is our way.  We started out as a weekend/part time event food truck, but slowly and steadily achieved a full time base of business including a permanent food truck location at Kuhl Linscomb (www.kuhl-linscomb.com) as well as commercial, corporate, and special event catering engagements.

It’s a family affair at Picnic on the Green! One of the reasons Picnic on the Green was founded was to create an opportunity to share the love of cooking and business with family and friends. While Carrie leads all cooking and creative efforts, her husband, Josh, and neighbor, John Vadell, lead all engineering and maintenance (our vintage step van, aka food truck, needs a lot of love!). Kids, Grace and Henry, often also help out on the truck during busy events and during the summers. Close friends, Priscella Encalade and Vilma Smith have been key to the success of our business; their support during the initial years of operation demonstrated amazing love and friendship.  Jessica Starks was critical during our start up, and Brooke Gordon is a huge help + keeps us going.  The great thing about a small business is that your teammates become family. We love to serve our community! The food business has given us an avenue to get to know and serve our community. We have been honored to be involved with local charities and churches, as well as to offer immediate assistance to the community during natural disasters.  We are also a proud supporter of Second Servings (www.secondservingshouston.org).
